Catalog description

The Cuisines and Cultures of the United States course offers the students instruction and experiences preparing, tasting, serving and evaluating traditional and regional dishes of the Unites States of America. Topics include exploring the flavor profiles, preparations and techniques representative of the cuisines from New England, the Mid-Atlantic, the South, the Floribean, Cajun / Creole, the Midwest, Texas, the Southwest, the Rocky Mountains, California, Pacific Northwest, Alaska and Hawaii.
