Capstone course requiring students to apply theoretical and practical knowledgeunder an individualized faculty-supervised hospitality project. Projectincorporates students' specific areas of expertise, including culinary arts, recipedevelopment, concept development, marketing strategies, beveragemanagement and profitability analysis. Completed project to be thoroughlyresearched, written and presented orally both to faculty and students.Prerequisite: CUL112, CUL116, CUL120, CUL132 and (CUL215 or CUL217).
