Catalog description

Traditional and contemporary processing methods will be introduced with emphasis on applications to food retail operations. The effect of these technologies on the storage life and sensory qualities of the products will be examined along with common modes of loss of quality in foods. Students will be introduced to industry-standard quality assurance measures.
