Discusses concepts of meal management as related to the foodservice industry. Content includes the development and maintenance of quality food and beverage service as they relate to an excellent dining experience. Focuses on American Service, but also covers French, English and Russian and Chinese. Students will gain experience as a ''Front of House'' servicer for the Terrace View Cafe. Provides step-by-step instructions on how to greet and seat guests, take orders, serve food and beverages, and handle the check.
