Catalog description

Provides students with effective oral and written communication skills. Instructs student in the use of standardized language for the nutrition care process. Focuses on assessment of educational needs, evaluation of educational outcomes and preparation/implementation of an educational plan. Includes an introduction to the use of cognitive behavioral theory, health belief model, social learning theory and transtheoretical model/strategies of change. Discusses the use of patient/client negotiation, needs and desires and readiness to change. Lifestyle factors, language, culture, educational level and socioeconomic considerations in providing nutrition education is discussed. Students develop cultural and literacy appropriate written educational materials.
