Catalog description

Explores microbial ecology and biochemical transformations relevant to selected fermentation systems. Emphasizes the application of microbiological and physico-chemical analyses as indicators for successful fermentation outcomes through hands-on experimentation. Develops critical thinking through reading of current literature to inform hypothesis generation and experimental design, and application of knowledge to evaluate the outcome of an intervention applied to selected fermentation systems.
