Integrates food packaging science, biopolymer engineering, and pilot-scale packaging operations within a design-oriented learning framework. Explores the development and optimization of polysaccharide-based edible films intended for highly oxidative food products. Emphasizes structure-property-performance relationships, particularly the influence of formulation variables on mechanical strength, sealability, and barrier performance. Provides hands-on laboratory training to cast and characterize edible films, measure mechanical and barrier-related properties, and integrate materials into functional packaging configurations.
