Culinary Arts Fundamentals

Catalog description

Offered autumn. Offered at Missoula College. Restricted to students in the Big Sky Culinary Institute Programs. This class will provide the fundamentals to the food service industry, the program, and kitchen expectations. The student will learn the basics of mise en place, safety and sanitation, recipe organization, culinary math, and product requisitioning. In addition, students will learn the importance of uniforms, knives, and other personal hygiene requirements prior to entering the kitchen.
