Catalog description

Students are introduced to the terminology, sourcing, preparation, and techniques used at fish and meat workstations typical of a restaurant kitchen. The majority of the course will be spent in a production kitchen to practice culinary techniques applicable to these workstations including butchery, fabrication, and proper tools and equipment selection. A prerequisite of CUL 220 is required.
