Catalog description
This course further develops pastry and baking terminology, preparation, and techniques through the study of pastry history, ingredient properties, common equipment, mixing methods, textural elements, and design. Students will enhance their understanding of these concepts by executing batch recipes and plated desserts in a production kitchen. Prerequisites: CUL 220 MTH 105
