Commodities selected for human consumption and methods used by food technologists to prolong shelf life, retard spoilage and ensure quality. Principles upon which various processing methodologies are based. This course affords students the ability to critically examine and evaluate the principles of the scientific method, model construction, and use the scientific method to explain natural experiences and phenomena.
