Catalog description

This course is an applied introductory course that focuses on the good manufacturing practices associated with food preservation and the critical thinking skills necessary to evaluate these practices. Processing applications include dry mix processing, dehydration, canning, simple extrusion, juice pasteurization, as well as packaging basics.
