Catalog description

Manhattan is notorious for a cholent of less than reputable Kosher certification agencies and their certificates hanging in the windows of many suspiciously not so Kosher looking restaurants. The goal of this course is to familiarize the consumer with the issues of kashrut in the food service industry: restaurants, catering halls, kiosks, bars, and supermarkets. From kosher slaughter to shawarma, and everything that goes in the laffa, students will learn the ropes of producing kosher food and become informed consumers.
