Advanced Livestock and Carcass Evaluation

Catalog description

This course will enhance the skills of evaluation of beef cattle, sheep, and swine in regards to breeding, market, and carcass evaluation. The course will also include preparation to present on topics/issues in the red meat industry and how they impact producers, processors, and consumers. Students will be able to effectively participate in Meat Animal Evaluation intercollegiate competitions and gain skills to obtain certification to judge youth livestock and meat contests.
