Catalog description

This course examines fat- and water-soluble vitamins and minerals in metabolic pathways of the body based on function or biochemical and physiological activity. The course will cover dietary sources, absorption, storage, metabolism, biochemistry, deficiency and toxicity of individual nutrients in the context of the DRIs. Some emphasis will be given to alterations of micronutrient metabolism in disease, and selected lifecycle conditions.
