Catalog description

The course provides an understanding of the relationship between nutritional factors and chronic diseases, with a focus on the role of the health educator as a nutrition therapist in providing appropriate dietary recommendations for disease prevention. Students will examine the role of vitamins, minerals, antioxidants, fats, cholesterol, and sodium, as well as nutrient deficiencies and h ealth risk. The health outcomes explored in the course will include obesity, cardiovascular disease, hypertension, cancer, diabetes, and osteoporosis.
