NFS 4943. Trends and Controversies in Nutrition and Food Sciences. Exploration through readings and discussions of current trends and controversies in nutrition such as the role of specific nutrients or dietary patterns in the prevention and treatment of diseases, functional foods, dietary supplements, and genetics and nutrition healthcare. Topics will vary to reflect current interests and issues. Course content may include sensitive topics related to nutrition and food. Prerequisite: NFS 2323 or equivalent. Three lecture hours a week. Credit: Three hours.
