NFS 4033. Food Chemistry. Principles of fundamental and relevant chemistry and functionality of major and minor food constituents including water, protein, lipid, carbohydrates, food additives, and food flavor. Prerequisites: CHEM 1123 , CHEM 1121 , NFS 3323 , NFS 3321 . Three lecture hours a week. Credit: Three hours.
