Catalog description

A study of the microorganisms associated with food products. Subjects include: classes of microorganisms, factors that influence growth of spoilage organism, food hazards and quality assurance, effects of preservation techniques on food-borne organisms, microbiology of preservation techniques on food-borne organisms, and microbiology of fermented food products. Two lectures and two laboratory periods per week.
