SUSTAINABLE FOOD SYSTEMS

Catalog description

Previously titled: Agriculture and Food Systems. With myriad entry points and social prompts to become a "conscious eater" in our society, there is value in deepening the level of understanding of the social, economic, and ecological justifications and impacts of our food consumption choices, and the scientific research behind it. This interdisciplinary course will use a systems-thinking framework to investigate and analyze the policies, practices, and challenges that characterize contemporary agriculture and food systems in the context of environmental and social sustainability. Students will learn through critical thinking writing assignments, exams, a research project, and hands-on engagement on the campus's Sustainability Farm.
