Catalog description

Food is an excellent mechanism through which to explore the chemistry of complex systems. The focus of this course will be applying the principles of physical, organic, and biological chemistry to important food components such as starches and proteins as well as food structures such as emulsions and foams. Readings from the primary literature and food-safe experiments are integral components of the course.
