This course explores how Italian culinary traditions reflect the country's geo-political and sociological diversity shaping its culture and lifestyle, and sparking a critical debate on ethical and environmental issues relevant to our modern-day global society. Students from varied disciplinary and cultural background are welcome to study, cook, and taste world-renowned Italian recipes! All the class lectures and readings will be in English.
