Catalog description
This course is a study of nutrition and food as applied to daily living, the promotion of health through nutrition and the prevention of nutrition related disease at the individual and community levels. Topics include the basics of nutritional biochemistry, assessment of nutritional problems and needs, identification and prevention of nutrition related disease, and practical skills needed to motivate, communicate, and effect positive nutrition and health behavioral changes. Emphasis is placed on the relationship between nutrition and health equity.
