Catalog description

This course explores how humans in the past acquired, processed, and consumed food, with special attention to plant remains, agricultural developments, cooking techniques and material evidence of cuisine. Using archaeological evidence, students will investigate how dietary practices shaped human biology, culture, and social organization.
