This introductory course explores the fundamental principles of human nutrition, emphasizing the role of food in supporting physical health, mental well-being, and disease prevention. Students will learn how nutrients function in the body, investigate the science behind dietary patterns, and critically examine the cultural, social, political, and environmental factors that influence what we eat. Open to students from all disciplines, the course connects nutrition to real-world challenges and empowers students to make informed food choices for themselves, their communities, and their future professions.
