P: HTM 31000 and 34100 with grades of C- or better. This course provides students with hands-on experience in consulting for a real restaurant business. It focuses on developing and applying analytical and managerial skills to assess key aspects of restaurant operations, including the business concept, operational environment, menu, service quality, financial documentation, marketing strategies, and customer behavior. Students will identify challenges and offer practical consulting solutions to support the restaurant’s growth. Emphasis is placed on understanding the local restaurant market and identifying critical success factors to help the business thrive.
