Catalog description

This course will review the underlying nutritional components and pathophysiology of common human diseases/disorders. The focus is on the metabolic disturbances and nutritional interventions for the prevention of these diseases. Topics include nutritional aspects of obesity, diabetes, cardiovascular disease, gastrointestinal and renal diseases, immunity and viral diseases, and cancer. The overall goal of this course is to expose students to the integrated nature of the disease process with a focus on nutritionally based or related diseases.
