Introduction to Nutrition Counseling

This course introduces students to the principles and issues present in the nutrition counseling relationship. Topics will include techniques designed to promote and support nutrition behavior change such as motivational interviewing, cognitive behavior change, working with resistance, transference, countertransference, how to conduct a nutrition counseling session, ADIME charting, coding, and billing issues. Students will learn how to give advise effectively, improve their listening and self-reflection skills as they progress through the course. Challenging topics will be addressed, such as cultural competence and diversity, eating disorders, weight bias and obesity will be explored through role-playing and simulation. The dietitian's role within the healthcare team, skill development through practical application and an introduction to Interprofessional interactions will be emphasized.
