Catalog description

Virtually no discipline attracts more public attention or generates more controversies than nutrition. With more access to nutrition facts and diet plans now than ever before, why does the American diet contribute to obesity? Students will examine the roles of fats, proteins, and carbohydrates by examining current "fad" diets such as keto, paleo, 30/30 diet, and others. Students will explore the scientific basis of dietary patterns of the latest trends and alternative diets for nutrition and healthy weight. Past and present diet trends are examined, focusing on the overall impact on individual and population wellness. This course will also explore the deeper causes and hidden influences that often result in following the latest nutrition trends. Students will be able to research, evaluate, and present their findings on a nutrition-related topic.
