A continuation of Basic Nutrition as it applies to the dietary manager. Covers medical nutrition therapy as it pertains to the foodservice operation in a healthcare facility. Addresses dietetic practice in support of the registered dietitian or dietetic technician in reference to nutritional assessment, care planning and education in the state of Ohio. The curriculum uses performance-based instruction in the field of learning (practicum) activities. Co-requisite: DMC298A
