Description: Development of analytical and interpersonal skills for understanding food systems, dietary patterns, and nutritional practices across global communities. Students examine how historical influences and contemporary dynamics shape food cultures, nutritional beliefs, and eating practices internationally. Course explores regional food traditions, and nutrition-related challenges and innovations worldwide. Students will identify opportunities for collaboration in addressing global food security, nutrition education, and sustainable food nutrition practices. LEC 1-6, Max 6
