Advanced Carbohydrate Chemistry and Technology

Catalog description

The course will cover molecular structure, properties, and functions of carbohydrates. Strong emphasis will be given to starch and non-starch polysaccharides, modification, applications, and uses in the different areas. Students taking the class will gain experience in the structure- function properties of a variety of carbohydrates used in the production of foods and non-food products. Prereq: Grad standing, and Chem 2510, and 2520, or equivalent; or permission of instructor.
