Application of biochemistry and physiology to understanding micronutrients, including structure, digestion, absorption, metabolism, excretion, requirements, sources, and interactions of vitamins, phytochemicals, water, electrolytes, and minerals. Prereq: 4609 and C- or higher in 2310 or 2410; and HumnNtr, MedDiet, AnimSci, or HNPES major.
