Exposure to a variety of ingredients and techniques that are commonly used across the Spanish-speaking world. Working hands-on with your classmates to read recipes in Spanish, you will recreate authentic dishes each week to sample and share. You will be introduced to recipes as they have changed throughout history, beginning with native ingredients in the American continents and Europe separately and then tracing the blending of cultures that resulted from cross-Atlantic trade during the years of the Spanish Empire. In addition to making and sampling food, you will learn more about the history and evolution of our food systems and national cuisines. You will also see how food interacts with and influences culture. While the Spanish language will be used in this class as we cook, no previous proficiency in Spanish is assumed or required to enroll. Offered: Fall, Spring.
