Catalog description

This course provides students with practical experience in the principles and operations of dining room management and service. Through hands-on participation in the Seagrass Restaurant Student Learning Lab, students will plan, prepare, and execute lunch service in a public pop-up restaurant, rotating through various front-of-the-house roles. Emphasis is placed on professional dining service techniques, sanitation standards, guest relations, and the aesthetic and organizational aspects of restaurant operations. Students will learn to manage the dining experience, set up and design dining spaces, and coordinate d©cor, table layouts, and themes to complement menu offerings and enhance overall guest satisfaction.
