Introduces the philosophy and practice of running and operating a retail operation with a focus on new venture initiation and small business management. Familiarizes students with the management systems and controls for labor, cost of goods, and daily accounting. Engages students in on-the-job training of running all aspects of a retail butchery operation selling directly to the consumer.
