Principles of human nutrition including digestion and absorption of macronutrients, role of vitamins and minerals, energy metabolism, nutrition assessment, diet planning, food safety and life span nutrition. Emphasis on food choices that promote health and prevent diet-related diseases. Prerequisite(s): BIOL 1710 or BIOL 1720; or permission of instructor. Course Typically Offered: Summer.
