Catalog description

Metabolism, function, physiological interactions, and chemistry of vitamins and minerals in animal systems will be presented. Information and discussion regarding vitamin and mineral dietary supply and metabolic demand will be included, as will aspects of their absorption, metabolic interactions, excretion, and implications in disease and health and well-being. Both fundamental principles and current published literature will be discussed. Examples from both livestock production and human health will be presented and discussed. Graduate Biochemistry is recommended before taking this class. Prereq: ANSC 627 or instructor permission.
