Catalog description
The study of nutrition is grounded in physiology, and linked to other fields, including anatomy, biochemistry, and microbiology. This course introduces important nutritional concepts fundamental to understanding the digestion and metabolism of carbohydrates, fat, and protein, as well as the primary functions of vitamins and minerals. Students gain an integrated understanding of the physiological requirements and functions of protein, energy, and the major vitamins and minerals that are determinants of health in animal species.
