Catalog description

This course focuses on micronutrients including fat- and water-soluble vitamins and minerals and phytochemicals. It will cover micronutrient and phytochemical sources, digestion, absorption, bioavailability, homeostasis, functions throughout the lifecycle, including roles in health promotion and disease prevention, and deficiency and toxicity states. Prerequisite: KNH 405/KNH 505 or equivalent.
