Prerequisite(s): NUT 2040 AND RST 1200 OR RST 2200 OR Permission of Instructor Corequisite(s): NUT 3110 General Studies: Natural and Physical Sciences This lab accompanies NUT 3110: Food Science. In the lab, students observe the fundamental roles of physical properties and chemical reactions of proteins, lipids, and carbohydrates in food systems. Students also test principles underlying food function and stability and engage in analyses of food properties.
