Catalog description

Studies comprehensive human nutrition. Covers nutrition principles and guidelines with historical and economic context for the evolution of whole to ultra-processed food consumption. Discusses carbohydrate, fat, protein, vitamin and mineral requirements and their roles and interrelationships in metabolism and health. Topics such as public health and life cycle nutrition add to the discussion about nutrition's role in health and disease. Students complete a dietary assessment project. In addition, broader topics concerning food systems and applied issues are addressed. Covers the role of nutrition in exercise training and performance, including ergogenic aids and eating disorders.
