Nutritional Assessment

Catalog description

Application of nutritional care process, evaluation of nutritional status, and special nutritional needs of individuals are determined through screening and assessment. Students will learn how to conduct comprehensive nutritional assessments that include but not limited to blood pressure, palpation, auscultation and reflexes of the knee and ankle, anthropometric and biochemical assessment, drug/nutrient interaction and dietary analysis). Students will learn the nutrition care process and the standardized format of diagnostics for documentation including analysis of dietary intake, identification of nutritional needs and deficiencies, and development of evidence-based nutrition plans to optimize health and prevent chronic diseases. This class will include counseling, interviewing, monitoring and evaluation skill building using ADIME (Assessment, Diagnostics, Intervention, Monitoring and Evaluation) and PES (Problem, Etiology, Signs and Symptoms) standardized by Academy of Nutrition and Dietetics.
