Many cooking shows on television are successful even though the chefs don't explain the why of their actions cooking, they are just now getting around to learning the chemistry behind the cooking. This course is about the need to know facts of chemistry that are essential to understanding food and cooking. (Previously NJCU Course CHEM-131)
