Quantitative methods covered include computational operations; measurements and units; kitchen ratios, baker’s percent, proportion, probability and statistics. Applications in- clude conversions, yield percentages, recipe costing, and interpretation and analysis of quantitative information common in the culinary field. Designed for a Culinary Arts degree and certificate and does not satisfy the quantitative reasoning requirements of other programs.
