This course offers a study of global history using food as a central focus. The course will center on a series of meals as case studies to examine broader themes, such as human environmental modification and exchange, the role of trade and migration in human history, the powerful influence of identity, and the gendered nature of labor roles in food production and preparation. Students will focus on these themes in various regional and national contexts to identify global patterns in the development of food cultures, and to engage in comparative analyses. 001530
