Catalog description

This course examines the food practices of different societies globally andhistorically. During the semester, the class will examine a particular region orset of regions and foodways, with attention to all points of the food chain:food consumption; diet, cuisine, and exchange; food marketing anddistribution practices; agricultural production, labor, technology, andenvironment.
