Catalog description
Foundations of Human Nutrition provides a comprehensive introduction to the science of human nutrition, emphasizing evidence-based concepts and current research. Students will explore the nature and roles of nutrients, nutrient requirements throughout the human life cycle, diseases resulting from over- and under-nutrition, food safety, and food sources. The course integrates quantitative reasoning skills through dietary analysis, energy calculations, and interpretation of nutritional data. The laboratory component provides hands-on experience with methodology and instrumentation involved in the analysis and evaluation of foods, their nutritional value, and diets.
