Advanced Human Nutrition I

Catalog description
Emphasis on reading original research literature in energy, protein and minerals with development of critical evaluation and thinking skills. Additionally, course will include discussion of sources, requirements, and utilization of energy (especially, carbohydrates and lipids) protein, energy, and minerals by humans. Dietary fiber will also be discussed. Emphasis will be on detailed evaluation of information from original research literature, especially regarding the interplay between digestion and metabolism of these macro- and micro-nutrients and disease, and development of critical evaluation and thinking skills. Recommended preparation: introductory nutrition and organic chemistry. Prereq: Graduate student in Nutrition MS, Public Health Nutrition MS, or Nutrition PhD program.
