A historical examination of how ethnic, racial, class, and gender identities have influenced the production and consumption of food in American society from 1607 to the present. Special emphasis placed on how changes in mass migration, medical knowledge, and technology in the past have influenced the foodways of common people, and how foods have played a range of roles in cultural oppression and resistance.
